Materials & Ingredients for Chocolate Coconut Cookies

3/4 cups whole wheat flour
1/2 teaspoon baking soda
1/2 cup butter or 1 stick (or applesauce)
1/4 cup white sugar
1/2 cup brown sugar
1/2 teaspoons vanilla extract
1 egg (optional or 1/4 cup more applesauce)
1 1/2 cups coconut
1 cup chocolate chips (regular or vegan)
1/8 cup caramel syrup (regular or vegan)
cinnamon (optional)
olive oil
For high altitude cooking or lower sugar cookies, add 1 teaspoon of water, increase flour by 1/4, (to 1 cup), and reduce sugar by 1/12 (1/6 cup white sugar, 5/12 cup brown sugar).
Mix Ingredients Except 2
Add all dry ingredients to the bowl except cinnamon. Then add all wet ingredients except butter. If using the vegan option, add the applesauce now. Mix well.
Add Final Ingredients
For easy mixing, melt butter in microwave (about 30 seconds to 1min, note that microwave cooking times vary) and pour into bowl with other ingredients. Then top with a thin layer of sprinkled cinnamon (optional). Mix well.
Put on Cookie Trays
Line trays with foil sheets, spray or spread a thin layer of olive oil on foil. Drop rounded spoonfuls of cookie dough onto foil, space them widely.
Bake Cookies
Bake your easy to make homemade Chocolate Coconut Cookies at 375 degrees F (200 degrees C) for 9 to 11 minutes or until golden brown.
