Materials & Ingredients for Chocolate Coconut Cookies
For this cookie recipe you’ll need :
1 med/large mixing bowl
1 regular spoon
1 measuring cup
cookie trays (for about 3 dozen cookies to space them widely)
foil for an easy clean up
(makes about 24 or 2 dozen cookies)
3/4 cups whole wheat flour
1/2 teaspoon baking soda
1/2 cup butter or 1 stick (or applesauce)
1/4 cup white sugar
1/2 cup brown sugar
1/2 teaspoons vanilla extract
1 egg (optional or 1/4 cup more applesauce)
1 1/2 cups coconut
1 cup chocolate chips (regular or vegan)
1/8 cup caramel syrup (regular or vegan)
For high altitude cooking or lower sugar cookies, add 1 teaspoon of water, increase flour by 1/4, (to 1 cup), and reduce sugar by 1/12 (1/6 cup white sugar, 5/12 cup brown sugar).
Mix Ingredients Except 2
Add all dry ingredients to the bowl except cinnamon. Then add all wet ingredients except butter. If using the vegan option, add the applesauce now. Mix well.
Add Final Ingredients
For easy mixing, melt butter in microwave (about 30 seconds to 1min, note that microwave cooking times vary) and pour into bowl with other ingredients. Then top with a thin layer of sprinkled cinnamon (optional). Mix well.
Put on Cookie Trays
Line trays with foil sheets, spray or spread a thin layer of olive oil on foil. Drop rounded spoonfuls of cookie dough onto foil, space them widely.
Bake your easy to make homemade Chocolate Coconut Cookies at 375 degrees F (200 degrees C) for 9 to 11 minutes or until golden brown.
Enjoy Homemade Cookies
Allow your homemade Samoa flavored cookies to cool, cut them apart if needed, and enjoy. They might not look anything like Samoas which are donut shaped, they’ll look more like whole wheat flour chocolate chip cookies, but the coconut, chocolate, and caramel gives them a similar flavor.
Storage and Preserving Fresh Baked Soft Cookie Taste
Put leftovers into a bowl and cover with the foil from cookie tray after shaking off crumbs and refrigerate. When you’re hungry for more, warm cookie on the lowest setting of the (horizontal) toaster oven to enjoy the taste of fresh baked homemade cookies for later sweet desserts. When they’re gone, the foil sheet is recyclable, your curbside recycling may accept it.
