Eden Selected Buckwheat Soba noodles are made from whole buckwheat flour and nothing else. A product of Japan, the Soba noodles are gluten free. Soba is made from buckwheat, which is actually a fruit, not a wheat product.
Soba noodles are great in hot soups or stir-fry dishes as well as in salads and cold noodle dishes. Soba sushi is a Japanese favorite often dipped in shoyu.
In terms of taste, the Buckwheat Soba has a nutty, hearty taste. If you like buckwheat pancakes, you will love soba noodles. It pairs especially nicely with shrimp in stir-fry dishes with green, red peppers, onions, broccoli and a favorite stir-fry sauce such as Passage To Thailand Pad Thai sauce, Annie Chun’s Kung Pao sauce or Organicville’s Island Teriyaki sauce.

No. 1: Eden Selected Buckwheat Soba calories: One serving or 2 ounces has 200 calories.
No. 2: Eden Selected Buckwheat Soba fat: One serving has 1 gram of fat.
No. 3: Eden Selected Buckwheat Soba nutritional facts: 5 mg sodium, 3 grams of fiber, 2 grams of sugar, 6 grams of protein and 200 mg potassium.
No. 4: Eden Selected Buckwheat Soba contains a number of nutrients such as 2 percent calcium, 6 percent iron, 6 percent zinc, 20 percent phosphorus. It is also high in the healthy Omega 3 with 26 mg and Omega 6 with 390 mg.
No. 5: To prepare the Eden Selected Buckwheat boil water and simmer for eight minutes. Rinse with cold water. It’s best, in my opinion, if you don’t overcook the soba noodles.
Although the Eden Selected Buckwheat soba pasta is naturally gluten free, it is made on equipment that also handles wheat.
For nutrition and taste, I give the Eden Selected Buckwheat Soba Pasta 4.8 out of 5 stars.
