Eating Healthy? Try These Sweet Popcorn Recipes

Sitting down to watch a movie can make it very tempting to snack. More times than not the snack that you choose will be on the non-healthy side instead of something nutritious. Below are some healthy snack recipes that can be made and stored for several days for when those snack urges occur.

Popcorn Recipes

These popcorn recipes are simple and easy, so grab the kids and begin popping up some healthy snacks. First, I want to add that growing your own popcorn is not only cost effective, but delicious. There is something about tilling the ground, planting the seeds, and watching the popcorn grow that makes eating it even better. This recipe calls for honey as the sweetener. Honey will add nutritional value to this already healthy snack.

Sweet Almond Popcorn Recipe

16 cups popped popcorn
1 and 1/2 cups sliced almonds
1 and 1/2 cups honey (preferably organic)
1/2 cup Smart Balance Buttery Spread
2 teaspoons vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt, optional

Spray a large bowl with non-stick cooking spray. Pour the popped popcorn into the bowl and sprinkle the sliced almonds on top. In a medium saucepan, melt buttery spread. Add honey and salt. Stir. Bring to a boil. Stir continually for 5 minutes. Remove from heat. Stir in vanilla and baking soda. Pour over popcorn and stir until coated. Spread onto a large cookie sheet lined with parchment paper. Place in oven at 325 degrees for 25 minutes. Stir several times during baking. Remove from oven and break up the pieces. Store in air tight container.

Healthy Snack Recipes

This recipe has very few ingredients and can be made with different flavored extracts. I have used caramel here, but feel free to use maple, butterscotch, or other flavored extracts.

Easy Caramel-Yogurt Popcorn Recipe

8 and 1/2 cups of popped popcorn
1 cup plain organic yogurt
6 ounces agave nectar
2 teaspoons caramel extract

Have popcorn ready in a large bowl. Meanwhile, combine yogurt and agave nectar in a saucepan. Using a candy thermometer, bring the mixture to 225 degrees. Remove from heat and add the caramel extract. Pour over the popped popcorn and stir to coat.

There are many ways to eat healthy, but don’t deprive yourself of wonderful tasting nutritious foods. Search the Internet for wonderful tasting recipes to enjoy without any guilt. Remember, if you are having health problems be sure to talk to a doctor. Sometimes, eating healthy isn’t always enough. Take care of yourself and try to squeeze in some exercise each day.
